Spencer Carrot Cake and Frosting

This cake is to die for if you're a Carrot Cake fan.
2 c. sifted flour
1 c. oil
2 tsp. baking soda
2 c. grated carrots
1 tsp. salt
1 can crushed pineapple -drain
2 tsp. cinnamon off all juice-very important!
2 c. white sugar
3/4 c. walnuts (optional)
4 eggs
Sift dry ingredients and add sugar, eggs and oil. Mix well. Add the can of pineapple. Bake in greased pan 35-40 minutes at 350 degrees.
 
Frosting: 
8 oz. cream cheese
1 tsp. almond extract
1/2 c. butter
1/2 box sifted powdered sugar
1/2 tsp. vanilla
