Carrot Cookies

3/4 c. shortening
1 c. sugar
1 tsp. baking powder
1 c. chopped nuts (optional)
1 c. cooked carrots, mashed
1 egg
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1/2 c. coconut

Cream shortening and sugar, add egg and mix well. Add all ingredients and
beat well. Drop by teaspoon on greased baking sheets. Bake at 375 degrees
for 15 minutes or until light brown. Ice while hot.

Icing:
grated rind of 1 orange
1 c. powder sugar
3 TBSP orange juice
pinch of salt
If the icing is too thick, thin with milk.
